Contents: A conceptual model is presented and analyzed for the factors influencing the authenticity of food in Turkish restaurants. In a sample of 32 restaurants, being 13% of the Turkish restaurants in The Netherlands, interviews concerning authenticity of food and concomitant problems of business policy were conducted. A minority of the restaurants made conscious adaptations to Dutch tastes. A majority of restaurants served, in their own opinion, authentic Turkish food. Adaptation to Dutch taste mainly takes place by selection of Turkish dishes that are in themselves authentic but are appropriate to Dutch taste.
