Hazard analysis and control of critical points (HACCP) is the preventive system based on a systematic definition of critical points along the stages of fruits processing. This HACCP was performad in a facility, producer and exporter of Tahití lime,located in the town of Tarragona, Municipality Cedeño of the Monagas state.
