Contents: Hazard analysis and control of critical points (HACCP) is the preventive system based on a systematic definition of critical points along the stages of fruits processing. This HACCP was performad in a facility, producer and exporter of Tahití lime,located in the town of Tarragona, Municipality Cedeño of the Monagas state. It was defined the flow diagram for the process and packing of the fruit; settling down the agents or risks; the critical points to be controlled were determined through preventive measures and surveillance
