Lipoxygenases are a family of related nonheme iron-containing enzymes that are widely distributed in plants. They own a uniform behaviour with respect to most properties but they exhibit some diversity, for instance in relation to their substrate and product specificity. This first part give a brief survey of plant lipoxygenases properties, comparing where necessary plant enzymes with animal lipoxygenases.<br><br>Las lipoxigenasas constituyen una familia de enzimas que contienen hierro no hemínico y que están ampliamente distribuidas en el reino vegetal. Poseen, respecto a la mayoría de las propiedades, una conducta bastante uniforme, pero exhiben alguna diferencia, por ejemplo en relación a la especificidad de sustrato y producto. En esta primera parte se da un breve repaso a las propiedades que poseen las lipoxigenasas vegetales, comparándolas con las lipoxigenasas animales donde fuera necesario. |
