Elastase was studied in viscera samples from five cod species. The elastase activity was found not to depend on species. It was, however, affected by season, especially for samples from the Icelandic Sea, where Atlantic cod caught in February-March had highest activity and Atlantic cod caught in April-June had lowest activity. A significant effect of fishing ground was also found for elastase activity in viscera from Atlantic cod. Samples from the Icelandic Sea had significantly higher activity than samples from the Barents Sea and the South coast of Ireland. Elastase in viscera from cod species was stable at temperatures up to 40°C, but rapidly lost activity at 50°C and higher. |
