Inhoud: The objective of this study was to determine the influence of the presence of food agents upon the adhesion of Bacillus cereus (NCTC 2599) spores to solid surfaces. B. cereus was chosen as a test organism since it has been shown to adhere very firmly to solid surfaces (Husmark & Ronner, 1992). The 22 surface materials selected are commonly used in food production equipment or are projected for use in the future. The adhesion of B. cereus spores to solid surfaces was found to be strongly influenced by food substances containing proteins. When the bulk phase contained proteins, adhesion to all surfaces tested was substantially decreased. Using a “clean system”;, a linear relationship was found between the relative surface hydrophobicity of the materials tested and the number of adhered spores.
