Contents: This study focuses on the observed behaviors of individual entrepreneurial practices of small business owners/operators within the foodservice industry. The focus of this four-year study was to combine observed behavior by the researcher and create a link between those observations and established entrepreneurial theory within academia. Conclusions are drawn from the observations in support of previous research by Hirsch and Peter's 1999 typology on individual entrepreneurial behaviors. This research was conducted as an avenue for future research endeavors in the field of foodservice and entrepreneurship.
