The distribution and chemical forms of heavy metals in polluted wheat seed were studied. The results indicated that the distribution of heavy metals in wheat was very uneven. The heavy metals in wheat chiefly existed in the chemical forms of binding states and accumulated in the parts of high protein. Thus the concentrations of heavy metals in the proteins were the highest. Separation of proteins by the Sephadex G-75 and subsequent analysis of Cd and Pb by atomic absorption spectroscopy revealed that they were mainly bound to proteins with molecular weights of 54.5 KD and 5.5 KD. During food processing, the concentrations of heavy metals in the edible parts decreased greatly. |
